The only hotel within Brazil’s Iguassu National Park, Belmond Hotel das Cataratas is a stone’s throw from the thundering Iguassu Falls. With the park still closed at dawn, the Deluxe Falls View Room gives you your own private performance.
What to eat: French rolls, papaya, and black coffee with a little milk.
The Ritz Carlton Hong Kong occupies floors 102 to 118 of the International Commerce Center in Kowloon. Floor-to-ceiling windows in the Deluxe Victoria Harbour Suite give spectacular views of the city and Victoria Harbour, while in-room dining means you can go from bed to breakfast in a flash.

Nestled within Bwindi Impenetrable Forest is Sanctuary Gorilla Forest Camp – an eight-tent luxury camp in southwest Uganda. A bar and dining cottage overlook the rainforest, and open-air breakfasts are taken on a raised natural platform. The views are lush and leafy and, due to the unique location, gorilla families have been known to visit the camp.
What to eat: Exotic fruit salad of mango, pineapple, passion fruit and papaya.
Set atop the cliffs, between the Pacific Ocean and Pittwater, Relais & Chateaux property Jonah’s overlooks Whale Beach, one of the most beautiful stretches of sand in Australia. All the rooms have private balconies and, if you stay between July and November, you may see the magnificent humpback whale migration.
What to eat: Try the hotel’s poached eggs and sweetcorn fritters. They come with bacon, cherry tomatoes, crushed avocado and fennel.
The rolling countryside and blue waters of the inland Pacific are the setting for Tierra Chiloé – a geometrically shaped, 12-room eco-hotel. Set in 25 acres of countryside close to the Pullao wetlands, all the rooms have panoramic views over the bay.
What to eat: Flat, round bread rolls and cured meats.
