Since opening Pollen Street Social in London in 2011, the Michelin-starred chef has built a food empire, with restaurants in Singapore, Hong Kong, Shanghai and Dubai. Ahead of two openings this year, he spoke to The Club about his favourite foodie destinations
What is your favourite overseas restaurant?
There are so many great restaurants, but at the moment I’m spending time in New York and loving Daniel Humm’s 11 Madison Park - it’s a glamorous restaurant, with top-class food and service.
…and at home?
Barrafina (both the original and new) in London is a must. Ollie Dabbous’ eponymous restaurant Dabbous is another favourite - they have the best duck-fat noodles I have ever tasted.
Where have you been recently that’s inspired you?
Again, New York - I’m launching my first restaurant there this year. It’s a very cool city.
Which country has inspired your cooking the most?
Asia - I have visited Hong Kong many times. I love the variety of their home-grown ingredients and spices.
Jason says Japanese cuisine is set for a revival
Which country’s culinary scene excites you the most?
Japan. While Peruvian food was a big trend last year, in 2015 it’s all going to be about Japanese cuisine.
Where in the world do you like going back to?
Dubai, because it was my first real taste of freedom and of having a life alongside my work. I met my wife there 10 years ago and we regularly go back. I’m also opening a restaurant - the Marina Social - within the new InterContinental Dubai Marina this year.
Where’s the best place you’ve ever stayed?
Post Ranch Inn in Big Sur, California (above) is spectacular - the views are amazing.
Where haven’t you been that is top of your bucket list?
Disneyland in Florida - my two daughters are mad for me to take them there!
Where do you go in London to escape the crowds?
The gym. I’m rarely away from crowds, so when I need to escape, that’s where I go.
What are your three packing essentials?
Chef whites, a chef knife and my iPad with all my recipes.
What's your top travel tip?
Travel light and take a good read.
