Best for: poolside cool
There’s no missing W Hotels’ sleek Barcelona outpost, set on the beachfront and shaped like a spectacular mirrored sail. Los Seises Sevilla, a Tribute Portfolio Hotel

Best for: a cultural escape
Metres away from Seville’s cathedral is Los Seises Sevilla, an atmospheric hideaway set in the former Archbishop’s palace, which celebrates the building’s heritage through original mosaic floors, Arabic columns and even Roman ruins. What His Grace would make of its latest incarnation is anyone’s guess – though he’d surely approve of its rooftop pool, set amid the city’s tiles and spires. It’s a handsome, sun-dappled expanse of blue, edged by linen curtains and loungers, with front-row views of the Giralda (the cathedral’s Moorish bell tower). After a day exploring the city, come back for a sundowner: the polished poolside bar does an excellent line in mint juleps.

Moxy Lisbon City

Best for: super savvy travellers
Showstopping pools often come at a premium, but not at the Moxy Lisbon City, a chic, budget-friendly stay with a heated pool perched on its roof. It’s bordered by a deckchair-dotted terrace and a colour-clashing mural (the perfect Instagram backdrop). Other plus points include the playful design and warm welcome: expect a complimentary cocktail on arrival, and possibly a round of foosball – there’s a table in the lobby, adding to the sociable vibe.

JW Marriott Cannes

Best for: rooftop Riviera chic
There’s no better place to soak up Cannes’ glamour than this elegant destination, set on the boutique-lined beachfront. Beyond a curving façade is contemporary luxury at its finest, starting with the snowy marble lobby and an epic crystal-leaf chandelier. The Sunset Terrace, set on the Croisette, is the best spot in town for people-watching, while rooms run from romantic sea-view hideaways to the princely Presidential Suite. The rooftop pool, naturally, is a chic affair: an octagonal design flanked by cushioned loungers. Bring a wide-brimmed hat and off-duty-starlet shades and you’ll fit right in.
